The first in Aphrodite’s Harvest range is the world-famous cheese, halloumi. Unlike the mass-produced version that is normally available in our supermarkets, this village-style, artisanal, traditional version is the authentic one – and one taste will transport you to the sun-drenched island!
No cow’s milk is used; only the milk from goats and sheep – adding the latter is the secret to forming a delicious golden brown crust when the cheese is fried. Mint is added to give a complimentary flavour but also to provide a natural preservative.
Using the old traditional methods that respect the history and seasonal provenance of the island, this halloumi is authentically handmade and, because it uses a non-animal rennet, is even vegetarian friendly.
This halloumi has a wonderfully rich and creamy flavour and a firm but elastic texture.
It is delicious served cold in salads or with fruit but can also be pan-fried, grilled or – in true Cypriot style – cooked on the BBQ.
The cheese is packaged in a 1kg eco-friendly box.
Be warned though – you may find it hard to stop eating it once you’ve started!
